Hydrolysis of soybean isoflavones by B-glucosidases from lactic acid bacterium

Abstract:A high active hydrolysis enzyme of β-glucosidases on sybean isoflavones was obtained by liquid fermentation with lactic acid bacterium.The hydrolysis conditions of soybean isoflavones by β-glucosidases were optimized by single factor and orthogonal tests.The optimal hydrolysis conditions of daidzin were as follows:concentration of enzyme 25μg/mL ,temperature 50¡æ,time 2.0h, pH6.0.The optimal hydrolysis conditions of genistin were as follows:concentration of enzyme 25 ug/mL,temperature 40℃, time 2.0 h, pH 5.5.Under the optimal conditions,the hydrolysis rate of daidzin and genistin reached 96.51% and 92.36%,respectively.
